My mentor, Wendy, is an entrepreneur and currently has a business called Mindful which is a non-profit business accelerator. Although her day job does not involve a connection to my senior project, her lifestyle does. Wendy has been a vegetarian for 33 years. Wendy became a vegetarian after listening to a seminar in California about healthy living. She decided to try it out and see the impact it would have on her, and it had a positive impact. She felt healthier and she enjoyed the diet, so she stuck with it. Surprisingly, her favorite food is kale and she describes eating kale as a way to destress and recompose. Wendy enjoys her vegetarian diet and I have had a wonderful time working with her throughout my project because she has a lot of knowledge to share with me.
